Vietnamese Chicken Salad
This Vietnamese Chicken Salad is one of my favourite dishes, my boys absolutely love it. It’s a healthy salad variation from Malibu Farm that’s so easy to prepare.
It has quinoa through it and peanuts over the top for some protein so it’s still satisfying. The dressing is so sweet, salty and tangy from the lime, maple syrup and fish sauce - it’s just delicious.
It’s the perfect dish for entertaining because you can prepare all the components in advance and assemble before serving.
Ingredients
Serves 8
Salad
4 cups cooked chicken - shredded
2 cups cooked red quinoa
2 cups finely shredded cabbage
2 cups finely sliced cucumber, carrot, and cilantro
4 tbsp black sesame seeds
Dressing
2 1/2 limes -juiced
3 garlic cloves - grated
4 tbsp maple syrup
6 tbsp fish sauce
1 tbsp sriracha
1/4 cup macadamia oil
1 tbsp sesame oil
DIRECTIONS
Combine the salad ingredients in a bowl.
Whisk together the dressing ingredients, pour over the salad, and toss.
